This salad had me dreaming of being on a Mediterranean holiday: fresh, nutritious and bursting with flavour! The dressing really elevates this salad too. Prawns are a great source of protein, B vitamins and trace minerals like zinc, iodine and selenium.
Ingredients: Serves 1-2
150g King Prawns
2 cups of cooked quinoa
1/2 medium cucumber, diced
8 cherry tomatoes, quartered
1/2 medium avocado, diced
1/2 medium courgette, diced
1/2 medium pepper, diced
80g good quality feta cheese, cubed
For the dressing:
1 handful fresh coriander
1 handful fresh mint
Fresh juice of 1 lime
1 tbsp apple cider vinegar
4 tbsp extra virgin olive oil
Pinch of sea salt
Method:
Add all the ingredients for the dressing to a blender and blitz until combined. Season to taste.
Combine all the ingredients in a big bowl, drizzle over the dressing and toss to ensure it gives a good coating to the salad. Enjoy!
