Recipe: Dark Chocolate Bark

I love chocolate- and absolutely believe that you can enjoy chocolate as part of a healthy diet. The key is to go for dark chocolate (min 70% cocoa solids). Dark chocolate is packed with nutrients: magnesium, fibre, antioxidants, zinc, selenium, iron and copper. Plus in this recipe the added nuts, seeds and goji berries up the ante on the nutritional benefits.


Ingredients:


300g Dark Chocolate (min 70% cocoa solids)

1/4 cup of goji berries

1/4 cup pumpkin seeds

1/4 cup chopped pecan nuts

1/4 cup chopped pistachios

1 tbsp coconut flakes or desiccated coconut


Method:


1.) Line a baking tray with greaseproof paper

2.) Melt the dark chocolate in bowl over a pan of simmering water

3.) Once melted, tip the chocolate on to the lined baking sheet and spread out to around 1/4 cm thick

4.) Sprinkle over the goji berries, nuts, seeds and coconut

5.) Refrigerate for 1 hour to set

6.) Once set, snap into pieces and store in a jar for up to 2 weeks
