These delicious dark chocolate and goji cookies really hit the spot for a slight sweet fix but without the crazy blood sugar spike or a normal cookie. As I was making these with the kids I didn't include any whole nuts but I think hazelnuts or pecans would be a great addition.
Ingredients:
3 cups whole oats
1/2 cup ground almonds
1 cup spelt flour (I used @dovesfarm)
1/2 cup almond butter
100ml milk of choice
1 egg
1/2 cup maple syrup
1/2 tsp baking powder
1tsp vanilla essence
100g 85% dark chocolate chopped in to small chunks
1 cup of goji berries
Big pinch of sea salt
Method:
Heat the oven to 180° and line a baking tray with greaseproof paper.
Add the oats, spelt flour, ground almonds, almond butter, maple syrup, egg, vanilla essence, baking powder and milk to a bowl and combine.
Add the chocolate chunks and goji berries and stir into the cookie mix.
Using your hands, roll the mixture into small balls (around the size of a golf ball) and then squash into a cookie shape. Place on the lined baking tray.
Bake in the oven for 15-20 mins until slightly browned on top but not burnt.
Remove from the oven, allow to cool, and enjoy!
