Ingredients: Serves 3
1 and ½ cup old-fashioned oats plus ¼ teaspoon ground cinnamon
3 tablespoons chia seeds
½ tablespoon almond butter or peanut butter
3 cups of milk of choice (e.g. unsweetened almond milk)
½ cup fruit (I like fresh or frozen blueberries or raspberries, or sliced fresh strawberries)
Drizzle of maple syrup or honey, if desired
Mix all the ingredients together in a bowl and cover. Leave to soak overnight in the fridge. In the morning, portion into bowls and top with more fruit, yoghurt and a sprinkling of seeds.
